The hand harvested grapes are from 60 year old vines on clay and chalk with classic large peebles near the plateau de Carbires (close to Chteau Montredon). The grapes undergo a traditional long 'cuvaison' with extended 21 24 days maceration on the skins to extract colour, fruit and tannins. The wine is aged for 14 18 months in large oak 'foudres barrels. Country
